How to: Vegan Coconut Cookies

I love baking, ..cooking on the other hand, cooking makes me violent, I hate it! But baking is different, I love the precision about it, I love knowing exact measurements that will produce a perfect cake! Before going vegan over 5 years ago I baked constantly and I almost opened up a cupcake business but, post vegan I lost the love for it and I put all my baking kit away. However, in the last 6 months I’ve been trying to make an effort to get back into it. I knew it had to involve Coconut and biscuits..and this is the result! I hope you enjoy xoxo

Step 1: Gather all your ingredients together with a baking tray lined with baking paper & preheat the oven to 180℃

Ingredients:
100g Oats
100g Plain Flour
100g Caster Sugar
100g Desiccated Coconut
100g Vegan Butter
2 tbsp Water
2 tbsp Golden Syrup
1 tsp Bicard of Soda

Step 2: Mix dry ingredients

In a large bowl, mix together flour, oats, coconut and caster sugar

Step 3: Melt butter & mix remaining ingredients

Melt vegan butter in a small pan over a low/medium heat. Once melted add the golden syrup and water and stir until all combined. Then add Bicarb of Soda and stir again

Step 4: Combine ingredients

Add the butter to the dry ingredients and mix well. The mixture will not be that sticky

Step 5: Create cookies!

I like to use a measuring spoon, or you can use a table spoon to pick up the mixture and roll into balls. Place the balls on the baking tray and push down with palm until the biscuits are about 1cm thick. Make sure there is space between the biscuits for spreading in the oven.

Step 6: Baking time!

Place in your oven and bake for about 7-10 mins. Remember biscuits have a high sugar content and you can go from nice and brown to bitter and burnt in seconds! I would watch the biscuits from 7 mins and decide how brown you would like them..I like the edges just a bit brown knowing the centre will be soft and chewy.

Step 7: Cool

Take out of oven and leave on tray for 1 min, the biscuits will be soft and fragile, so leave them to slightly harden before using a spatula to move onto a wire rack to cool.

Step 8: Make a cup of tea & eat!

I love tea and biscuits, so make yourself a pot and eat all the biscuits to yourself, or share.. it’s up to you!
